Dave’s Pecan Pie

As a southern born boy I have always loved pecan pie. I have made many pies in my life, but, pecan pies have always been my favorite pie. Add a scoop of vanilla ice cream and you have the perfect desert.

For the Dough
1 cup all purpose flour
1/2 tsp salt
7 tbsp cold unsalted butter
1/4 cup ice water

Preheat the oven to 350. Add the flour and salt to a mixing bowl. Using the large holes of a food grater, grate the butter into the flour. Blend the butter into the flour mixture using your fingertips. Nead the dough. Roll the dough out using a rolling pin. Place into a greased 8 1/2 inch pie pan. Cut off the edges around the pan edge.

Pie Filling
3 eggs
1 cup white sugar
1 cup dark corn syrup
2 tbsp melted unsalted butter
1 1/2 tsp pure vanilla extract
1/8 tsp salt
1/2 cup dark roasted ground pecans
1 cup med pecan pieces

Beat the eggs, add the sugar, corn syrup, butter, vanilla, salt, and the ground pecans. Blend well. Add the pecan pieces and mix. Pour into the pie shell. Bake in a preheated 350 degree oven for 40 minutes. Reduce the heat to 325 degrees and bake until brown, 35 to 40 minutes. Let the pie cool to room temperature for 1 hour before serving.
