Country Style BBQ Pork Ribs


Today I am cooking country style pork ribs on my grill. It is early Monday morning but I have other things to do this afternoon. So ribs it is. I like my ribs to cook a long time on low heat so 2 of my burners are off and the other 2 are turned down. I like to keep the temperature around 250 degrees for the first hour. Let’s talk about the rub that I use. I like to make my own RUB and BBQ Sauce here is the recipes.
All Around Rub
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup paprika
2 tbsp kosher salt
1 tsp black pepper
2 tbsp garlic salt
1 tsp cayenne pepper
1 tsp ground cumin
1/4 tsp ground coriander
1/8 tsp allspice

I like to put all the spices in my food processor and blend and chop them up.
I then put the rub onto the meat and put it into a zip lock bag if time permits.
I like to refrigerate mine for at least 4 hours and sometimes overnight if when possible.


1 1/4 cups ketchup
1 cup water
3/4 cup vinegar
3/4 cup tomato paste
3/4 cup brown sugar
2/3 cup corn syrup
1/2 pure maple syrup
4 tbsp honey
3 tbsp malasses
4 tsp salt
4 tsp worcestershire sauce
1 tbsp apple sauce
1 1/2 tsp soy sauce
1 1/2 tsp liquid smoke
1 tsp onion power
3/4 tsp corn starch
1/2 tsp dried mustard power
1/2 tsp cayenne pepper
1/4 black pepper
1/8 tsp garlic power
1/8 tsp white pepper
1/8 tsp celery seed

Add all the ingredients into a small stock pot and heat to a small boil and then reduce the heat and simmer for a few hours stirring occasionally.
