Beef Enchilada Bake

If you like Mexican food but you would like to stay home, here is the dish for you. This recipe is from Velveeta and Ro*tel. We have shared this dish with family and they loved it and its simple to make.

1 lb of ground beef
1 can (10.75 oz) reduced-sodium condensed cream of chicken soup
1/2 lb (8 oz) Velveeta cut into 1/2 cubes
6 corn tortillas (6 inch) cut in half
1 can (10 oz Ro*Tel Diced tomatoes & green chilies undrained.

Heat the oven to 350 degrees
Brown the ground beef in a large skillet and then drain all the fat off
Stir in the soup and 1 cup of the velveeta
Spoon in 1/3 of the meat mixture into an 8 oz square baking dish.
Add the tortilla halfs and 1/4 cup of the Ro*Tel
Repeat the layers
Top withe the remaining meat mixture, Ro*Tel and Velveeta
Bake for 25 minutes or until it is heated through.

  1. This must be very delicious, I just don’t eat beef. :). Enchilada has always been famous, you can travel and see the mexican influence in other countries through food. Thanks for sharing this yummy recipe, I’ll recommend it to others. 🙂
